Parlem de dos dels formatges coneguts a nivell internacional, la burrata i la mozzarella. En sabem realment les difer\u00e8ncies entre ells i quines s\u00f3n les caracter\u00edstiques? Te les expliquem!\u00a0<\/strong><\/h6>\n\n\n\n<p><strong>Elaboraci\u00f3<\/strong><\/p>\n\n\n\n<p>La mozzarella s\u2019elabora, generalment, a partir del quall de llet de vaca pasteuritzada, on s\u2019afegeixen posteriorment ferments l\u00e0ctics. Aquest quall es redueix en tires, s\u2019amassa amb aigua bullint a uns 90\u00baC i s\u2019estira per a&nbsp;<strong>filar-la i tallar-la en diferents formats<\/strong>. La burrata, en canvi, sorgeix a partir de la mateixa pasta filada per\u00f2&nbsp;<strong>s\u2019hi afegeix nata<\/strong>, una barreja que dona lloc a l\u2019anomenada&nbsp;<strong><em>stracciatella<\/em><\/strong>. La capa exterior de pasta filada, m\u00e9s compacta, \u00e9s l\u2019encarregada de contenir l\u2019stracciatella a l\u2019interior del formatge. Per aquesta ra\u00f3, la burrata aporta una&nbsp;<strong>textura m\u00e9s cremosa i suau<\/strong>&nbsp;al seu interior respecte a la major consist\u00e8ncia de la mozzarella.&nbsp;<\/p>\n\n\n\n<p><strong>Sabor<\/strong><\/p>\n\n\n\n<p>La mozzarella t\u00e9 un&nbsp;<strong>sabor m\u00e9s neutre<\/strong>&nbsp;i s\u2019acostuma a utilitzar com a base en diferents elaboracions, com torrades, pizzes o amanides. El sabor de la burrata \u00e9s molt m\u00e9s&nbsp;<strong>potent i pronunciat<\/strong>&nbsp;i, per tant, gaireb\u00e9 no necessita acompanyaments d\u2019altres ingredients. Es pot menjar sola, acompanyada amb alguna salsa o en una amanida. Aquest tipus de burrates, no es poden congelar, ja que les propietats organol\u00e8ptiques es podrien veure afectades en el moment de consumir-la. Encara aix\u00ed, existeixen formats de&nbsp;<strong>burrates congelades en sec<\/strong>, un tipus de tractament t\u00e8rmic que s\u00ed que accepta i que pot arribar a conservar-se durant uns 6 mesos. La burrata s\u2019acostuma a presentar en format de sac petit, entre 100 i 150 gr aprox.&nbsp;Pel que fa a&nbsp;<strong>la mozzarella<\/strong>, se serveix en diferents formats, des de boles fins a blocs rectangulars, tamb\u00e9 en fresc o congelat, aix\u00ed com en format filat o llescat. &nbsp;<\/p>\n\n\n\n<p><strong>Algunes curiositats&#8230;<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>La seva\u00a0<strong>regi\u00f3 de proced\u00e8ncia<\/strong>\u00a0dels dos formatges \u00e9s diferent.
